Gloves and Bare-Hand Contact
Bare-hand contact with ready-to-eat food is prohibited, and single-use gloves are a barrier rather than a substitute for handwashing. This hub covers when to change gloves, the approved alternatives to bare hands, the 9th Edition requirements for cut-resistant gloves, and the exceptions.
Gloves are the most misunderstood item in a kitchen. Staff treat them as protection, and they are not. They are a barrier between two things, and a barrier only works if both sides of it are managed.
Bare-hand contact with ready-to-eat food is prohibited
Ready-to-eat food is food that will be eaten without any further cooking step: salads, sandwiches, garnishes, sliced fruit, bread, cooked food that has been cooled, ice, and anything already plated.
Raw food has a safety net. If a pathogen lands on a chicken breast, cooking it to 165F destroys the pathogen. Ready-to-eat food has no such net. If a food handler carrying Norovirus, Hepatitis A, or Staphylococcus aureus touches a sandwich with bare hands, the guest eats what was on those hands.
Approved alternatives to bare hands:
- Single-use gloves, the most common method
- Tongs, scoops, ladles, and spatulas
- Deli tissue or wax paper
- Dispensing equipment such as squeeze bottles and portion servers
If a question asks how to place a lemon wedge on a glass or a pickle on a plate, the answer is tongs, deli tissue, or gloves. Never fingers.
The exception
Some jurisdictions permit bare-hand contact with ready-to-eat food if the operation has a written alternative procedure approved by the local regulatory authority, backed by double handwashing, documentation, and staff training. For exam purposes, treat bare-hand contact as prohibited unless the question specifically describes an approved alternative procedure. If it does, the procedure is the correct answer rather than the practice.
Gloves do not replace handwashing
Wash hands before putting gloves on. This is the sequence the exams test most often. Dirty hands contaminate the inside of a glove, pathogens transfer through pinholes and small tears, and the moment the glove comes off those hands touch something else.
Change gloves:

And two absolutes:
- Never wash or reuse single-use gloves. Washing tears them and does not reliably remove pathogens. Single use means single use.
- Wash hands when removing gloves, not just before putting them on, because the outside of a used glove has been handled during removal.
Gloves must fit. Oversized gloves slip and bunch and make careful work impossible. Undersized gloves tear. Stock more than one size. Keep non-latex gloves available, because latex allergies affect both staff and guests, and provide them immediately when a food handler reports one.
Cut-resistant gloves
Not every glove in a kitchen is disposable. Cut-resistant gloves are worn on the non-knife hand for tasks with a real laceration risk: running an open-blade slicer, shucking oysters, breaking down a case of protein, cleaning a mandoline. They are safety equipment and they are meant to be worn repeatedly.
That reuse is why the 9th Edition sets purchasing requirements for them. When buying cut-resistant gloves, they must be:

Those are the same three words the Food Code applies to food-contact surfaces, for the same reason: a porous surface cannot be cleaned reliably.
Two rules for using them. First, a cut-resistant glove is not a food-contact barrier. If the task also involves touching ready-to-eat food, put a single-use glove over the cut-resistant glove. Second, because they are reused, they must be cleaned and sanitized on the same basis as any other reusable food-contact item.
If you are asked what cut-resistant gloves must be, the answer is smooth, durable, and nonabsorbent. If you are asked whether wearing one satisfies the no-bare-hand-contact rule, the answer is no.
Cuts, bandages, and finger cots
A food handler with a cut or wound on the hand needs two layers. An impermeable cover goes on first, meaning a bandage or a finger cot that liquid cannot pass through, and then a single-use glove goes over the top. A cloth bandage alone is not enough, because it absorbs and it comes loose.
An infected wound or a boil containing pus is a different matter. That is a reportable condition, because it points to Staphylococcus aureus, and it may require restriction rather than a dressing.
Wounds elsewhere on the body are covered with a dry, tight-fitting, impermeable bandage. On the arm, that means the bandage plus a sleeve or a wrap that keeps it in place.
Where gloves go wrong in practice
Most glove violations are not ignorance, they are momentum. A cook portions raw chicken, hears their name called, answers, comes back, and keeps going with the same gloves. A prep hand wears one pair of gloves through a four-hour shift because changing them costs thirty seconds each time.
That is why gloves are a training and monitoring topic as much as a rule. The Person in Charge trains the sequence, watches for it, corrects it on the spot, and retrains when the same failure keeps appearing. Stocking gloves within reach of the station where they are needed removes most of the excuse.
Food Handler versus Manager: how deep to go
Food Handler candidates need the wash-then-glove sequence, the list of situations that require a glove change, the prohibition on washing or reusing gloves, the approved alternatives to bare hands, and the two-layer rule for a cut on the hand. This block is heavily weighted on that exam.
Manager candidates need all of that plus the cut-resistant glove purchasing requirements, the rule that a single-use glove goes over a cut-resistant one for ready-to-eat food, the written alternative procedure exception and what it requires, latex allergy accommodation, and the duty to train, monitor, and retrain on glove practice.

1. B. Hands are washed before gloves go on. A is wrong because a hand antiseptic is used after washing, never instead of it. C skips soap and warm water. D is the misconception the rule exists to correct.
